So here’s the thing. I dream about pie sometimes. Semi-often. Often. Okay, every night pretty much. I’m constantly thinking about new and interesting seasonal flavor combinations and how I can make each pie I make a little bit different and better than the last. Some may consider it obsessive. I consider it therapeutic. There’s a difference there, right?
Anyways, let’s dive into the important stuff: PIE. Rosemary Pear Caramel Pie, to be exact. Y’all. This pie is perfectly balanced in flavor. Not too sweet, not too savory, with the flakiest, most delicious crust that I’m convinced was sent to me straight from Heaven. Thanks for that, God. But seriously, this pie or really any pie is a great thing to have in your repertoire. People are always, 1. Impressed and 2. STOKED ON LIFE when you bring pie somewhere. It’s without doubt a huge crowd pleaser, and I’m pretty convinced will change lives when it enters a room.
Now, when you see this recipe I don’t want you to run away in fear. I almost did that the first time I made a pie. I was terrified for my life, really. I remember freaking out half way through thinking I had screwed the whole thing up so I made Stuart help me finish to calm my nerves. Real life. That happened. But guess what? It was friggin’ delicious! Even with the steps I thought I had “screwed up”. Seriously. So, put your big girl (or boy!) pants on and maybe even a fun apron and get to bakin’. Or bacon. Or both? You might definitely want to munch on some bacon while you make this buddy. Always recommended.
